What (side) effects can changing the Architectures (ARCHS, VALID_ARCHS, etc) in iOS have? Which Architectures are necessary?

After updating to Xcode 12 I have some trouble to compile an iOS project which exists since iOS 2 (!)

I was able to solve these problems by simply using $(ARCHS
