Or you can add a .stop() before the .animate and the animation will stop immediately after you remove the pointer.

$('.div').hover(function() {
    $(this).stop().animate({
        height: '300px'
    }, 300);
},function() {
    $(this).stop().animate({
        height: '30px'
    }, 300);
