I was able to do this using a DocumentFilter. Create a class like the example below, then add it to your Swagger configuration as:

        services.AddSwaggerGen(options =>
        {
            options.SwaggerDoc("v1", new Info { Title = "Your title API v1.0", Version = "v1.0" });
            options.DocumentFilter();
        });
