Here is my list of things to delete for OSX Mountain Lion

~/.eclipse (folder);

~/Library/Saved Application/org.eclipse.eclipse.savedState;

~/Library/Preferences/org.eclipse.eclipse.plist;

~/Library/Caches/org.eclipse.eclipse;

... and of course the eclipse install folder
